A classic Kiwi coffee time treat. Found in cafes all over NZ - “cabinet food”.

This recipe is so easy to make and comes from my dear much missed Mother in Law, Frances Fowler ❤️ (with a few UK tweaks)

NZ CHEESE SCONES 🇳🇿
Serves: 8
INGREDIENTS
2 cups plain flour
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon cayenne pepper (optional)
2 x spring onion sliced (optional)
2 cups grated Tasty Cheese (UK mature Cheddar/Red Leicester cheese)
1 cup full-cream milk
METHOD
1. Sift the flour, baking powder, sugar, salt and cayenne pepper into a bowl.
2. Mix in the grated cheese. Make a well in the centre and pour in the milk. Mix lightly then turn out on a floured bench. Shape into a rectangle about 3cm high.
3. Cut into 8 and transfer on to a baking tray.
4. Bake at 220°C / 200c Fan for 15-20 minutes until deep golden
